Chickpeas & Fetta Salad
  • 500g can of chickpeas
  • 2 cucumbers diced
  • 2 tomatoes diced
  • 1 red capsicum diced
  • ½ cup of quinoa cooked
  • feta cheese (to your liking but not much is needed)
  • A handful of parsley chopped
  • salt & pepper to taste
  • a dash of Moroccan seasoning
  • olive oil
  1. Put all the ingredients together in a bowl and mix them all up!
