Need something that is quick and easy for a lunch or even a snack? I have this huge love for avocados. High in Vitamin K, which is great for building strong bones and preventing heart disease. It also has many other vitamins and nutrients that can help with your body’s system. More importantly, I think avocado tastes pretty good when served sweet or savoury.
Besides using avocado as a spread in sandwiches or wraps, I usually serve it as a guacamole or in salads or even as a plain dip with rice crackers . My favourite go-to recipe for a light lunch or snack is this smoked salmon & avocado spread toast. I actually picked up this recipe idea off Miss Glamorazzi’s video. Well more the idea of using smoked salmon really. But, it all depends on the spices you use to spruce up your avocado spread and you can also substitute the smoked salmon with poached egg or even some sauteed mushrooms for any vegetarians out there.
Instead of using a piece of toast, you can also eat it with those rice crackers or whatever base you’d like really. This tastes splendidly well with Cruskits or those Vitawheat crispbreads. I’m not too much of a health nut and yes I have opted to go with white bread (GASP!) because that’s how I roll.
